Tokushima sits on the island of Shikoku, a city shaped by two remarkable forces — the deep indigo dyes it has produced for centuries, and the powerful ocean whirlpools that churn through the Naruto Strait at its doorstep. Its ramen reflects that intensity completely: a dark, soy-rich pork broth — bold, deeply complex, and built to linger. The noodles are firm and medium-thick, known as "Cha Kei," substantial enough to hold their own against the powerful soup. What sets this bowl apart is the chashu — sweet-braised pork belly with a spiced edge that carries the warmth of sukiyaki, caramelized and tender in equal measure.
