An intimate, refined experience featuring our chefs' finest sushi creations. This Food Concert beautifully showcased Japanese, European, and local ingredients, blending elegant flavors with a modernist touch.
Michelin-starred chef Billy Kong delighted the senses with harmony, balance, and grace. His menu featured Japanese hairy crab from the Hokkaido region served with shiso flower, as well as soy sauce-cured bluefin tuna and flame-seared fatty tuna — both sourced from Spain.
